I cook by experience, so accurate measurements aren’t part of the instructions. This will only matter with the dough. If you know how to bake bread, the proportions should be obvious. If not, scale from a recipe you find online. For a printable version, click Here
Basic dough:
2 cups Flour
¾ cup warm Water
1 TBSP Yeast
1 TBSP Honey
1 TBSP Oil
1 pinch Salt
I like to proof the yeast, especially in winter when it grows more slowly.
Anyway when all of this is mixed together and kneaded together into a ball you will realize that you have a lot more dough then what is needed for a single pizza. That’s because I make a loaf of bread with what is left over since the oven is hot. Scale appropriately. Anyway, when you are done kneading, set the dough aside in a covered bowl to rise.
When potatoes are done cooking, peel them and mash with enough oil to make them elastic. Add whatever you want to make them tasty. Salt of course, pepper…try rosemary, oregano and a tiny bit of cumin.
When the dough has doubled preheat the oven to 375 F, and punch the doughball down. Once deflated cut, or pinch off a fist-sized piece and return the rest to the bowl if you plan to make more pizza, or knead it up, roll it, and place in a cornmeal lined bread pan to rise again.
Scatter cornmeal on the rolling surface and throw the small doughball in the middle. With fingers together begin to spread the dough by pushing down around the edges, turning and pushing until the ball is flattened. Using a rolling pin, flatten the dough further until it is the size of your pan. This may require more cornmeal.
For purists who happen to have a round pan, you can do the over-the-head toss. Just be sure to keep your hands floured.
For the Thick-Crust pagans out there you will want a larger doughball, and you won’t need the rolling pin.
Once you have it in the pan, put it in the oven and bake 5 minutes.
Once cool, spread top with pasta sauce, throw on chunks of pineapple chopped small, soyrizo (vegan chorizo), bits of garlic, onion, to cover and then thrown on mashed potatoes to cover all.
At this point, decide if a bit of grated cheese is overkill.
When done adding things, throw it in the oven and bake until it’s done, usually about 20 minutes. You will smell it. Don’t let it burn.
Remove and let it cool on a wire rack until you can’t resist trying it. Serve with hot sauce, really. Tabasco on a pizza turns out to be the 4th best thing to come into my life from my marriage.
